Oven Jerk Chicken
Allspice, thyme and Scotch bonnet make an aromatic marinade for crisp-roasted chicken.

The Story Behind the Dish
Jerk is closely associated with Jamaica and traditions of fire and smoke. This oven adaptation uses a jerk-style seasoning without claiming the flavor of pimento-wood cooking.
Ingredients
- 1 kg bone-in chicken thighs and drumsticks
- 4 scallions; 3 garlic cloves; 1 tbsp chopped ginger
- 1 Scotch bonnet, stemmed, or less to taste
- 2 tsp ground allspice; 1 tsp thyme
- 2 tbsp soy sauce; 2 tbsp lime juice; 1 tbsp oil
- 1 tbsp brown sugar; 1/2 tsp salt
Instructions
- Blend scallions, garlic, ginger, chile, allspice, thyme, soy, lime, oil, sugar and salt. Wear gloves when handling the hot pepper.
- Coat chicken with the marinade, cover and refrigerate at least 2 hours. Keep raw chicken separate from other food.
- Heat oven to 200°C. Arrange chicken skin-side up on a lined tray and roast 40–50 minutes until browned and the thickest part reaches 74°C.
- Rest 5 minutes before serving. Do not use uncooked leftover marinade as a sauce.
Cook's Tips
- The preparation time includes 2 hours of marinating. Remove pepper seeds for milder heat, but it will still be spicy.

How to Serve It
Serve with rice and peas, cabbage or a crisp salad prepared separately. Offer lime alongside and warn diners that Scotch bonnet can remain hot even after its seeds are removed.
Variations & Substitutions
For a grill adaptation, use indirect heat and check the thickest chicken pieces reach 74°C. That is a separate cooking method; the listed oven time does not transfer directly to a charcoal grill.
A habanero is a practical Scotch bonnet substitute but changes aroma. Use less pepper for milder chicken. Allspice is essential to this seasoning; do not replace it with a generic mixed-spice blend.
Storage & Reheating
Refrigerate cooked chicken within 2 hours, at 4°C or below, and use within 3 days. Discard marinade that touched raw chicken rather than storing it as a ready-to-eat sauce.
Cover with foil and warm at 180°C until the thickest part reaches 74°C, then uncover briefly to refresh the skin. Reheat only the portions needed.
