The Story Behind the Dish
Butter tarts have a long place in Canadian home baking. Raisins, nuts and the firmness of the filling are matters of family preference.
Ingredients
- 1 sheet all-butter pie pastry, about 350 g, chilled
- 60 g butter, melted and cooled
- 150 g brown sugar
- 100 ml maple syrup
- 1 large egg
- 1 tsp vanilla; 1/4 tsp salt
- 60 g raisins, optional
Instructions
- Heat oven to 200°C. Roll pastry to 3 mm and cut twelve 10 cm circles. Line a 12-cup muffin pan without stretching the dough; chill 10 minutes.
- Whisk cooled butter, sugar, syrup, egg, vanilla and salt until smooth. Divide raisins among shells if using.
- Fill shells only two-thirds full. Bake 18–22 minutes until the pastry is golden and the filling bubbles at the edges.
- Cool in the pan for 15 minutes, then loosen edges and lift onto a rack. Allow another 20 minutes before serving.
Cook's Tips
- Cooling takes an additional 35 minutes. Chill the pastry while making the filling to keep the shells flaky.

How to Serve It
Serve at room temperature, one tart per portion, with coffee or tea. Allow the stated 35 minutes of cooling before eating; hot sugar filling can burn and will seem much runnier.
Variations & Substitutions
Raisins are optional. Replace the 60 g raisins with 60 g chopped pecans for a nut variation, identifying the allergen. Do not add both in full amounts or the cups may overflow.
Use a prepared all-butter pie crust rather than puff pastry. Golden syrup can replace maple syrup but changes the flavor. Check whether the pastry already contains salt before adding more to the filling.
Storage & Reheating
Once cooled, refrigerate in a covered container at 4°C or below for up to 3 days. Freeze individually for up to 2 months and thaw overnight in the refrigerator.
Reheating is optional. To refresh the pastry, warm briefly at 150°C, then let the filling cool before biting. Do not microwave until bubbling: the sugar center heats unevenly.
