Annatto paste colors and seasons the chicken before the simmer. The small amount of browned sugar gives depth; stop at amber, because burnt sugar makes the entire gravy bitter. Keep the braise gentle.

The Story Behind the Dish

Stewed chicken is a familiar part of Belizean home cooking, often served with rice and beans. Seasonings vary among families and communities.

Ingredients

  • 1 kg bone-in chicken thighs
  • 1 tbsp annatto paste; 1 tbsp lime juice
  • 1 tsp salt; 1/2 tsp black pepper
  • 2 tbsp oil; 1 tsp brown sugar
  • 1 onion, sliced; 3 garlic cloves, minced
  • 1 tsp dried thyme; 300 ml chicken stock
  • 1 tbsp Worcestershire sauce

Instructions

  1. Rub chicken with annatto, lime, salt and pepper. Set aside while slicing onion; wash hands and utensils after touching raw chicken.
  2. Heat oil in a heavy pot and dissolve sugar until amber, not black. Add chicken carefully and brown 4 minutes per side.
  3. Add onion and garlic and cook 3 minutes. Pour in stock, thyme and Worcestershire. Cover and simmer 35–40 minutes until chicken reaches 74°C.
  4. Uncover and simmer 5 minutes to thicken the gravy. Taste for salt and serve with rice and beans if desired.

Cook's Tips

  • Annatto pastes vary in salt; taste the sauce before adding more seasoning.

Home-style recipe; not independently kitchen-tested. Check all ingredients and substitutions for allergens. Times are estimates; use the texture and temperature checks in the method. Serving accompaniments are separate unless listed. In temperatures above 32°C, refrigerate perishables within 1 hour rather than 2.

How to Serve It

Serve with rice and beans and spoon the onion gravy over the chicken. A cabbage salad can be prepared separately for contrast.

Variations & Substitutions

Some cooks use different recado blends or a darker sugar browning. This version keeps the sugar light and the sauce savory; do not turn it into a sweet caramel coating.

Use bone-in thighs for the stated time. Boneless pieces cook sooner; check 74°C. Annatto pastes vary, so use the measured tablespoon and taste the finished gravy before adding salt.

Storage & Reheating

Refrigerate chicken with its gravy within 2 hours at 4°C or below for up to 3 days. Store any rice separately and use it within 24 hours after prompt chilling.

Warm covered with a splash of stock until the chicken reaches 74°C. Stir the gravy gently; avoid reducing it until the chicken dries out.
