The Story Behind the Dish
Argentina has many regional empanadas, with differences in filling, seasoning and cooking. These baked beef empanadas are one home-style version.
Ingredients
- 12 ready-made empanada discs for baking, about 15 cm wide
- 500 g ground beef; 2 onions, finely chopped
- 2 tbsp oil; 1 tsp paprika; 1/2 tsp cumin
- 60 g green olives, chopped; 2 hard-boiled eggs, chopped
- 1/2 tsp salt; 1 egg, beaten, for brushing
Instructions
- Cook onions in oil 10 minutes until soft. Add beef, paprika, cumin and salt and cook 8–10 minutes until beef reaches 71°C.
- Stir in olives and chopped eggs. Spread filling on a clean tray to cool 15 minutes; it should not be hot when filling pastry.
- Heat oven to 200°C. Divide the cooled filling into twelve portions. Put one portion in the center of each disc, leaving a clean 2 cm border; moisten the border with water, fold into a half-moon and seal firmly with a crimp or fork.
- Arrange on a lined tray, brush with egg and bake 20–25 minutes until golden and hot inside.

- Do not overfill; a little space at the edges makes a better seal.

How to Serve It
Serve two empanadas per person while warm, with a salad or chimichurri separately. Let the hot filling settle for a few minutes before biting.
Variations & Substitutions
Argentine regional versions differ in beef cut, olives, eggs and seasoning. These baked ground-beef empanadas are one home version; a fried variation needs a separate oil-temperature method.
Use baking-suitable empanada discs, not a product labeled only for frying. Hand-chopped beef gives another texture but must be cooked before filling. Check pastry and egg allergens.
Storage & Reheating
Refrigerate within 2 hours at 4°C or below and use within 3 days. Freeze cooled baked empanadas individually for up to 2 months, then transfer to a sealed container.
Warm at 180°C until the filling reaches 74°C. Cover loosely if the crust browns too fast, then uncover to crisp. A microwave warms the filling but softens pastry.
