  3. Mash avocado with lime and mayonnaise. Fold in cooled chicken, cilantro, onion and the filling's 1/4 teaspoon salt. Keep the salad refrigerated at 4°C or below until the arepas are ready.
  4. Split warm arepas without cutting all the way through and fill. Serve immediately; refrigerate any extra filling.
